Recipe Blueberry Protein Pancakes

Yummy protein pancakes!

 

Ingredients:

  • 2 large eggs
  • 1/2 cup egg whites
  • 1tsp baking powder
  • 1tsp vanilla
  • 1tsp cinnamon
  • 5 packets monk fruit sweetener
  • 1/2 cup blueberries
  • 2 scoops vanilla protein powder
  • 1/2 cup water (add more for consistency you prefer)

I blended all ingredients in a nutri-bullet. Spray pan with coconut oil and pour mix onto pan.

Wait til cake bubbles and flip. Sprinkle with cinnamon or sweetener. I used Walden Farms syrup to top!
